We will be celebrating Ian's 2nd birthday this coming weekend while his Grammy and PaPa are visiting us in Texas. Since we've determined that Graeme is allergic to dairy and soy - I've had to eliminate both from my diet. Now, we all know this mama is not going to forgo birthday cake! After a little research, I found a recipe that might work on a forum on Chowhound.com.
Dump Cake (dairy free and soy free)
3 cups flour
1/2 cup unsweetened cocoa powder
1 tsp salt
2 cups sugar
2 tsp baking soda
2 tbs cider or white vinegar
2 tsp vanilla extract
2/3 cup vegetable oil
2 cups lukewarm water
Preheat oven to 350 degrees. Mix all dry ingredients in a medium mixing bowl. Pour the liquid ingredients over the dry, adding the water last. Stir the mixture gently till everything is incorporated. Pour everything onto a sheet pan, or 2 8-inch cake pans and bake about 30-35 minutes. Cool in the pan on a wire rack. Sprinkle with cocoa or confectioner's sugar over the top to make it prettier.
Clare and I often bake in the afternoon if both boys are napping. Today, we decided to make a dry run of the cake for the party on Saturday.
Once the cake has cooled, we'll make this frosting and color it blue or green! I'll post pictures of the final cake after the party.
